Plantain and scent leaf porridge
Most of my meals are fast, fresh, healthy and of course weight loss oriented. Probably because i’m a market woman at lagos island. You leave home early, come back late. No time to ask time. I don’t want to come home and spend several hours again in the kitchen.
This is one recipe you can whip up in less than 30mins.
Ingredients for Plantain and scent leaf porridge:
3-4 unripe plantain
1 ripe plantain
2 handful ugu or green of your choice
1 handful scent leaf
1/2 tsp Salt
1/2 tsp seasoning
1 large onion
1tsp grated ginger
1 cup ugba or substitute with 1/2 cup locust beans
1tbsp black pepper
Peel and dice plantain. Put into pot of water, add every other ingredient apart from veggies and leave to boil. It should take roughly 15mins to get it boiling.
Wash and cut up the vegetables, add to the boilng plantain and stir. Taste for salt and seasoning and adjust accordingly. Cover for a minute or 2 and bring down from fire.
My people, food is ready.
Here you have it, Delicious mouth watering plantain porrige. This recipe is safe for even diabetes patients. Low in sugar and cholesterol.
Hope you noticed no palm oil and it still turned out splendid. The yellow color was achieved with turmeric 😉.
You can also wow your holiday guests with this meal. Feel free to add various meat of choice for a more gbish gbish effect.
