Spinach and carrot sauce

Spinach is a high fiber vegetable loaded with antioxidants, vitamins and minerals for a healthy life. Enjoy its many benefits in this mouth watering sauce with carrot and semi-ripe plantain.

Spinach and carrot sauce

Ingredients for Spinach and carrot sauce :

2 semi ripe Plantain

2 cups spinach

1 cup diced carrots

Crayfish

Roasted Fish

Onions

Seasoning

Salt to taste

Pepper

Turmeric

Preparation :

Wash the plantain and cut in large pieces. Boil with peel till tender and set aside.

For the sauce, wash and slice spinach, carrots, uziza leaves and onion.

In a saucepan, stir fry the uziza vegetable and carrots with seasoning, turmeric, pepper, crayfish and salt. ( add the spinach when uziza leaves are tender). Your fried fish goes in next, then stir properly and cover for 3mins.

Don’t overcook to enjoy the crunchy taste.Peel and dice already boiled plantain, then serve hot. Bon apetit 🍜😘
